What is a mother? Some have described the role of mothers as being a teacher, nurse, cook, housekeeper, coach, maid, chauffeur, caretaker, nutritionist, story teller, monster killer, planner, organizer, decorator, crafter, bookkeeper, secretary, manager, best friend, multitasking queen and Wonder Woman. And often, that is just her first job! What would we do without them?
The Farmers Market wants to celebrate mothers this Saturday by giving out special recipes to every mom. Moms are typically the one in the home who prepares the meals within the parameters of a budget. Cooking healthy with organic fresh veggies can be super simple and inexpensive. Since this is the season of plentiful, vitamin rich greens, I’m giving you a great recipe for beans and greens. This soup is hearty, full of nutrition, fiber, and costs less than $2 a serving.
1/4 cup extra-virgin olive oil
1 red onion or leek, sliced into thin half-moons
1 clove garlic, peeled and smashed
5 cups rich chicken stock or vegetable stock
2 tablespoons good wine vinegar
1 cup cooked beans, chickpeas, or lentils
2 cups cleaned and roughly chopped cooking greens (kale, spinach, chard, cabbage, collard or mustard greens)
1 dried chili, optional
Salt, pepper and garlic powder to taste
2 tablespoons really good extra-virgin olive oil
Grilled bread, for serving
In a large heavy-bottomed pan, warm the olive oil over medium heat. Add the onions or leeks and garlic clove and gently brown. When lightly colored, add stock and vinegar. Bring to a light simmer and add cooked legumes. Bring back to a simmer and add greens and chili, if using.
Depending on what greens you use, you will cook the soup a little more or less. Spinach would cook in a minute or two, while kale and cabbage would take more like 5 to 8 minutes. You want to simmer long enough to wilt and cook the greens but not to overcook them.
Taste and adjust salt. Serve by itself or with grilled bread with a drizzle of olive oil on top
